Ingredients:

  • 1 lb uncooked shrimp (peeled)

  • 2 tsp vegetable oil

Honey Garlic Shrimp:

  • 1/4 cup soy sauce

  • 1/4 cup honey

  • 1 tbsp minced garlic

  • 1 tbsp minced ginger

    • Out of minced ginger? No problem. I substituted this with ground ginger and it worked just fine!

Now that we have our ingredients, let’s start cooking!

  1. Thaw shrimp in a bowl of cold water.

  2. Whisk the soy sauce, honey, garlic, and ginger together in a medium bowl.

  3. Put the shrimp and half of the marinade into a ziplock bag or container & shake.

    • I used a ziplock bag and let the bag of shrimp with marinade sit in the refrigerator (for about 30 minutes or less) to really soak in all the flavor!

  4. Place Instant Pot on sauté. Add vegetable oil, shrimp and marinade. Cook for 3 minutes stirring regularly.

  5. Cover the Instant Pot and set to Manual High Pressure for 5 minutes.

    • PRO TIP: Don’t overcook - it will take away the rich savory flavor of the shrimp.

  6. When complete, do a Quick Release & be sure to follow the Instant Pot safety directions.

    • Switch the pressure valve to the venting position and let the steam release.

  7. Once the steam is completely released, open the lid and stir the shrimp. Serve & enjoy!

    • For a nice touch & pretty display, sprinkle some coriander leaves over the shrimp.

TRADER JOE'S "HAUL"

I guess this really isn't a "HAUL" but just an excuse to share with y'all a few of the goodies I picked up the other day from Trader Joe's!

A few of the items include:

  • medium sized shrimp

  • vegetable fried rice

  • organic rice cauliflower

  • seasonings: chile & lime, everything but the bagel, seasoning salt

  • cookie butter

  • tortillas

  • cauliflower pizza

  • chicken sausage

… just to name a few!

I seasoned the chile & lime with when cooking the shrimp, mixed in some bell peppers, spread avocado on the tortilla, sprinkled some hot sauce/sriracha sauce and BAM! I present to you 'Taco Tuesday’s Shrimp Taco’

This vegetable fried rice was SO EASY & QUICK to make. I just threw the bag into a pan, let it sit and then mixed after a few minutes, added some sriracha sauce and dinner is served.
